Bruschetta

Who loves to munch the juicy and cute little grape tomatoes ? I do. And if it is to be combined with some roasted garlic and olive oil, to top it on toasted Baguette slices... hmm gets even more lovely.



I love making it. Ofcourse, because of the ease of making it. At the same time, I love the smell of the garlic roasted in olive oil. Ohh, that aroma itself is so mouth watering.




Bruschetta could be considered as a breakfast recipe or as an appetizer. They are amazingly delicious for the ease of its preparation. 


If you are playing host to a bunch of people and have multiple things to juggle with in the kitchen, Bruschetta is an easy and impressive idea to be served as appetizers. 


When you go through the recipe you would know, there is nothing much to do in it. But at the same time sounds so fancy, tastes so fresh with juicy tomatoes and aromatic with the olive oil and garlic in it that anyone would fall for it.





Ingredients


  1. 1 Baguette - sliced in about 1/2 inch thickness
  2. 1 box (8 oz) of grape tomatoes - washed and cut into half or quartered
  3. 1 tbsp of extra virgin olive oil
  4. 1/2 tbsp of finely chopped fresh garlic
  5. A handful of fresh basil leaves - finely chopped
  6. Salt and pepper powder to taste
Method
  • In a serving bowl, take the cut grape tomatoes. Keep it aside.
  • In a skillet, pour in the olive oil. Once hot, add the chopped garlic. Once they loose its rawness add the chopped basil leaves. Saute it lightly. Remove it from the heat and pour it on top of the bowl of tomatoes. Add some salt and pepper powder to it and give a mix.
  • In the same pan, line the sliced baguette pieces and lightly toast it on both sides. Use additional olive oil if required. Remove it on to a plate and serve it hot with the tomatoes on its side.
  • You could top each bread piece with tomato toppings and serve it or leave it for your guests to serve it themselves.
Tips
  1. You could use any other country bread or italian bread instead of baguette, if you wish to.
  2. You could use normal tomatoes as well instead of grape tomatoes.
  3. If you wish to use eggs for the toppings, you could try using this recipe .

    1. he he... I clearly have too much free time in hand else I would buy the bread rather than going through all that kneading and proofing stuff.... Veruthe erikkumbol kerunna oro agrahangal anne... hence I try making bread and use it in whatever different forms I can...

  4. Wau.....love ur bruschetta recipe.........In ur last post, when u said abt bruschetta......I was thinking..."enthayirikkum athu". This is so simple and fast recipe and the best one.......to eat baguette with a good twist and offers a difference from our usual bread jam, bread gravy combination......Whenever we go to costo, I used to think "what to do with this kinda little tomatoes". u have given a good answer for that also ....... :-)
