Mango Shrikhand

The only cousin who had got her vacations falling during the same time of the year as ours was Anu. On one such vacation, she always used to keep mentioning about Shrikhand and how much she loved it. Now I had no clue about it. And then I saw the advertisement of Amul Shrikhand, which otherwise had never seemed to have got attention from my end earlier. Somehow I never had Shrikhand made by Amul but yes other local companies. I have loved it ever since.



Summer can't be said goodbye without having eaten enough mangoes, simply diced or as Mango Shake or in any other form. When I mentioned about making Shrikhand, Jacob wasn't anxious about it even though he has never had it before. But when Jordan turned 4 months, I wanted to make something. Not big, but something simple yet special. Hence, this post happened. So when Jacob came back from work , I gave his share to him(I couldn't wait untill he was back, so ate as soon as it was ready :)) and he didn't even bother to ask me if I needed it (usually he does ask) but scrapped off every bit of it. So its gonna be made more frequent on the coming weeks before the mangoes disappear from the market. 



So before the manoges go off season, why don't you too try it. You would love it. 


Ingredients
  1. 1 ripe mango, pureed / 1 cup of mango puree 
  2. 2 1/2 cups of yogurt
  3. 2-3 cardamom - crushed
  4. 6 tbsp of sugar
  5. A pinch of saffron
  6. 2 tbsp of warm milk
  7. Almonds for garnishing

Method
  • Chop the almonds and keep it aside.
  • In a muslin cloth, take the yogurt and tie it. Now hang it so that the whey gets drained out from the yogurt. It would take 5-6 hours. You could keep it in the fridge, if you feel the yogurt would turn out to be too sour in the current weather conditions. 
  • Soak the saffron in the warm milk.
  • Once the yogurt is ready. Remove it into a bowl. Add sugar to it and whisk it well. Add mango puree, cardamom and saffron mixture. Mix it thoroughly using a whisk to form a smooth paste.
  • Remove it onto a serving bowl and refrigerate it untill its chilled. When its time to serve, garnish it with almonds.

Tips
  1. Adjust the sugar as per taste. The above measure is for medium sweetness.
  2. This recipe is not at all difficult to make. The only thing to note while making is that you mix everything thoroughly. Because texture of Shrikhand is what makes it special.
  3. You could use pistachios for garnishing.

  5. I might had this as a kid, but don't remember so. The ingredients that goes in cannot go wrong when combined together, so I bet it tastes delicious. So how is the weather there Anupa? We are not getting anymore good mangoes here :(

    1. Thanks Shibi...Weather here is so unpredictable these days.... might be a real sunny day and all of a sudden it might get all cloudy and then rain... But it has brought in some relief to that summer heat...

    1. Here too its hot on certain days...other days it rains or is cloudy...not at all complaining abt it cause it helps us go out with our lil champ :) else we would have been locked inside our house...

  12. hhmm never tasted this, even after seeing so many blog posts about Shirkand, enthaannu ee Shirkhand.. nammalum onnu aringirikanamallo....nokkattee..mangoes ellalo.. what to do..here in b'lore also weather is unpredictable.. i hope it wint rain for Onam.....Happy that is Jordan is doing well..
