Mango Pudding

Mango - one fruit that is always looked forward to be enjoyed during summer in different forms is my favorite among fruits. May be because of the rendezvous that we do have with the best tasting mango during summer. It always happens with us that we tend to research/try different mangoes available in the market  and by the time we have spotted the best source for the delicious mangoes the summer comes to an end and we have to wait for another summer to come to enjoy this fruit.








But no matter what, we do enjoy this fruit during summer as if there is no end to it. In the form of drinks, desserts etc. they are always in high demand at home. This time we tried the pudding that is very easy peasy to put together and highly appreciated by everyone. These are great to treat your friends for a summer party. So try and let me know if you liked it.






Ingredients
  1. 1 cup of ripe mango puree
  2. 4 oz of cream cheese
  3. 1/2 cup of powdered white sugar
  4. 1/2 cup of chilled whipping cream
  5. 1/2 tbsp of gelatin
Method
  • In a sauce pan, dissolve the gelatin in about 4 tbsp of water. Keep it aside for about 5 minutes. it will get a semi solid texture. Add about 1/3 cup of water to it.  Heat it on low. Mix it well, untill the gelatin gets dissolved in the water completely, as it warms up. Remove it from the burner and let it cool down untill, it is warm to touch.
  • In a bowl, take the cream cheese and beat it to smooth it out.
  • In another bowl, take the chilled whipping cream and beat it untill it forms smooth peaks.
  • Add the powdered sugar, cream cheese and pureed mango, beat it untill everything gets mixed.
  • Add the luke warm gelatin mixture to it. Beat it once again for everything to get incorporated well.
  • Distribute it into glasses or tumbler of your choice and cover the glasses with cling wraps. Chill it for about 8 hours in the refrigerated for it to set. 
  • Garnish it with berries and cubbed mangoes. Serve chilled.
Tips
  1. I have used glasses to serve this mango pudding. You could just spread it in a pan and once set, cut into cubes to serve it. In that case, you could top it with some chocolate garnishing .
