The weather has been super confusing. Just one week back, we had great sunny days that we thought that the outdoor times are going to increase for us. But over this weekend it had again gone back to cloudy and gloomy days. And with such weather, some comforting soup is all what we crave for, while we stay indoors.
This potato soup has been a hit at home. My kido is a big potato fan. Infact, he says his favorite veggie is potato :). I would have been glad if he said that for atleast one of the green and leafy veggies. Well, this soup has been liked by him too that we try it every now and then. This loaded potato soup is heavy and would leave you full.
This soup is best for winter. But since the weather made me feel that the winter has still not left us, I thought I should publish it and not wait for the winter to come again. Hence, this post gets to see the light :). So here you go.
Ingredients

Ingredients
- 1 large potatoes, peeled and cubbed
- 1 cup of chopped onion, preferably yellow onion
- 2 cups of chicken broth
- 3 strips of bacon
- 2 tbsp of butter + 1 tbsp of butter
- 2 tbsp of all purpose flour
- 1 cup of milk
- 1/2 tsp of ground pepper
- 1 cup of shredded cheddar cheese
- Salt to taste
Method
- In a skillet, add 1 tbsp of butter. Once it melts, cook the bacon in it untill crisp. Drain it onto a kitchen towel. Crumble or break them down into small pieces.
- Use the same skillet and melted butter to cook the onion. Cook it untill tender.
- In another pot, add the onion, broth and potatoes. Bring it to a boil. Reduce the heat and cook it untill the potatoes turn very tender.
- In the skillet, melt the remaining butter on low heat. Stir in the flour and whisk it to get it incorporated in the butter without any lumps. Gradually add the milk. Let it cook for couple of minutes. Add the milk mixture into the potato mixture. Add pepper and salt to taste. Cook over medium heat, while you stir untill the mixture is thickened.
- Stir in the fried cooked bacon and the cheddar cheese. Reserve some bacon and cheese if you would want to garnish the soup with it. Cook it untill thoroughly heated and the cheese gets melted.
- Serve the soup having garnished it with bacon or cheddar or green onion or all three :).
Tips
- You could also add some cooked ham if you would love to bite into it :).
- You could also use some green onion to garnish.
