When pumpkins are in season, make the most of it. Not only is the pulp of pumpkin edible, but also its seeds. Some roasted pumpkin seeds are great to munch on. We love having it . And it is not tough at all to make it and stores well too.
Now when I think of all the pumpkin seeds that I threw away, without knowing if those could be eaten, I feel sorry. They are yum. My kid loves to munch on it and so do we.

- Seeds from a large pumpkin
- 1 tbsp of oilve oil
- 1 tsp of red chilly powder
- 1/4 tsp of garam masala powder
- Salt to taste
- Make sure you wash/ rinse the seeds thoroughly to remove all the flesh that is sticking on to the seeds.
- Spread the seeds on a baking tray. Pour the oil over it and sprinkle the red chilly powder, garam masala and salt.
- Give it all a mix so that all the seeds get coated with the spices.
- Bake it in the oven at 350 F for about 30-40 minutes or untill golden brown. Mid way through, stir it or toss it
- Remove it from the oven and let it cool.
- Store it in an air tight container.
- You could try adding spices of your choice to make it interesting.
