Pancakes are our goto snack or breakfast, when nothing really clicks, as to what to make and feed the herd. Now when bananas have been ignored by people for couple of days and they start getting spotted and get even more ignored, those end up in the pancakes too.
Ingredients
These pancake are healthier because they have oats in them and they taste great when had like these yummy pancakes. And it's a great way to include oats in the diet if someone doesn't eat it otherwise. So here is how I make it.
Ingredients
- 1 1/2 cups of powdered oats
- 1 over ripe banana
- 1 large egg
- 1/3 cup of milk
- 1 tbsp of sugar
- A pinch of salt
- Hand full of raisins
- 1/2 tsp of baking powder
Method
- In a bowl, add the powdered oats, sugar, salt and baking powder. Mix it well so that all the ingredients get mixed up.
- In another bowl, mash the banana well. To it add, egg. Beat it well. Add the milk to it. Beat everything together.
- To the wet mixture, add the dry ingredients little by little while you keep mixing it. Mix it all together to form a not too thick batter.
- Keep it aside for about 10 minutes. The batter would have turned thicker than earlier.
- Heat a skillet. Once hot, apply some oil or butter. Turn down the heat to medium. Pour a paddle full of pancake batter. Place few raisins on the pancake. Let it cook for about 1 minute or untill the bubbles pop up on the pancake . Flip it and cook it for another minute. Remove it onto a serving plate.
- Serve it warm with some butter and maple syrup.
Tips
- Make the batter a little loose because the oats tends to soak up water when it sits. So the batter when rested for 10 minutes would turn thicker.
- Feel free to add blueberries or other fruits as per your preference.
