Beetroot Thoran / Beetroot Stir fry with coconut

Thoran is so close to heart, for a Mallu. I love stir fries too but something with coconut in it, is so heavenly. I remember being a beetroot hater as a kid. But now when I think of it, I feel so foolish of myself to have avoided a beautiful and yummy veggie for all those years. So to make it up, this veggie makes its appearance on our menu quite often, now. 




And nope, this veggie just doesn't limit to savory stuff, but they make a great ingredient in cakes and halwas too. This beetroot thoran is just one way they are being served at our place. If you would want to try it, here is the recipe.







Ingredients
  1. 3 medium sized beetroot, peeled and grated
  2. 4-5 shallots sliced
  3. 2-3 green chillies, slit length wise
  4. 1 strand of curry leaves
  5. 1/2 tsp of turmeric powder 
  6. 1 1/2 cups of grated coconut
  7. Salt to taste
  8. 2 tbsp of coconut oil 

Method
  • In a pan, take oil. Heat it. Once hot, add the shallots, green chillies, curry leaves and salt. Turn down the heat to medium. Sauté it untill the onions turn tender. 
  • Add the grated beetroot. Mix it thoroughly. Cover it and cook it on medium - low heat for about 6-7 minutes while you stir it occasionally to avoid sticking at the bottom of the pan.
  • Now add the grated coconut and give it a stir. Cover and cook for another minute. Then uncover the pan and cook it for one more minute. Switch off the heat.
  • Serve it with some steamed rice, Moru kachiyathu and Meen curry.
Tips
  1. You could dice the beetroot into small cubes for making this thoran. I just prefer them to be grated.

  1. I have always felt that grated beetroot is better in thoran because the sweetness tends to get neutralised with the addition of green chilly. Having it as cubes tends to make it a bit more sweeter. Nice pic:)
