Curd Rice

The most comforting food is what I would want to describe, curd rice as. I just love having it and my lil monkey has also taken over that love for curd rice from me. So we make it often. With the rise in temperature, this is one perfect lunch option. That random bite on juicy pomegranate seeds is one big thing to like about it. But unfortunately, now pomegranate is not in season. But that doesn't stop us in enjoying this delicious crud rice with some pickle and papad. Perfect ! 








Enjoy this curd rice this summer. They are perfect to cool down when it is super hot and boiling outside. Here is the recipe to it.






Ingredients
  1. 1/2 cup of white rice
  2. 1/4 cup of milk, boiled and hot 
  3. 1/2 cup of thick yogurt
  4. 2- 3 tbsp of grated carrot 
  5. 2-3 tbsp of grated cucumber 
  6. 2-3 tbsp of pomegranate seeds
  7. 1 green chilliy, finely chopped
  8. 1 tsp of grated ginger
  9. 1-2 tbsp of coriander leaves
  10. Salt to taste
For tempering
  1. 2 tbsp of oil
  2. 1 tsp of mustard seed
  3. 1 tsp of urad dal
  4. 2 red chillies
  5. A pinch of asafoetida 
  6. 1 strand of curry leaves
Method
  • Cook the white rice. Once done, mash the rice a little and add the hot milk to it. Mix it and keep it aside.
  • Once the rice cools down, add the yogurt and mix it. 
  • Now add carrot, cucumber, pomegranate seeds, ginger, green chillies, coriander leaves and salt.
  • Prepare the tempting by heating the oil in a pan. Once hot, add the mustard seed. Once they pop, add the urad dal and sauté it . Once it turns golden brown, add the red chillies, asafoetida and curry leaves. Fry it. 
  • Add the asafoetida and give it a mix. Switch off the heat. Pour it on top of curd rice and mix it.
  • Serve it with some pickle and papad.
Tips
  1. If you wouldn't like to bite on a raw ginger while having the curd rice, you can fry it a little, while tempering and add it to the curd rice.
  2. Do not add cold milk to the rice. Milk should be hot when you add it. Also, make sure that the rice has cooled down completely before you add the yogurt.
  3. You could choose to add other veggies and fruits like apples and grapes etc. to make it more interesting.
