Kadai Bhindi Jalfrezi

Capsicum and okra are our favorite veggies. And when they come together in a single dish it sure gets a thumbs up. 








This kadahi bindi is one big hit at our place. It goes equally well with both rice and roti. Though my favorite combo is this stir fry paired with some tadka dal, roti and mango pickle. It is just yumm.







This could make way for some delicious meal with very little effort involved. So try it and let me know if you like it.


Ingredients

  1. 1/2 cup of sliced onion
  2. 1 tsp of grated garlic
  3. 1 tsp of grated ginger
  4. 2-3 green chillies, slit length wise
  5. 2 cups of  okra, cut long and slant
  6. 1 cup of green capsicum/bell pepper, cut long and thin
  7. 1 cup of red capsicum/bell pepper, cut long and thin
  8. 1 tomato, cut long and thin and seeds removed
  9. 1/4 tsp of turmeric powder
  10. 1/2 tsp of cumin powder
  11. 1 tsp of red chilly powder
  12. 1/2 tsp of garam masala
  13. 2 tbsp of oil
  14. Salt to taste
Method
  • In a pan,  heat the oil. Once hot, add the onion and green chillies. Add in salt and mix it. Reduce the heat to medium. 
  • Once the onions turn tender, add turmeric powder, the grated ginger and garlic. Saute it. Wait for it to loose its raw smell. Now add the okra. Give it all a mix. Cover and cook, stirring occasionally, untill the lady's finger turn tender and half cooked.
  • Now add the capsicum and give it a stir. Cook it covered for about 2-3 minutes.
  • Add the tomatoes and give it a stir. Sprinkle the red chilly powder, cumin powder and garam masala. Give it a mix gently so that the okra doesn't go mushy and gooey. Cover and cook for 2-3 minutes. 
  • Now open the pan, let it continue to cook on medium flame untill the dish looses the extra moisture, which should take about a minute or so. 
  • Remove it from the flame. Serve it with rice or roti.
Tips
  1. Do not stir the dish often. Else the okra would go mushy and gooey and the dish wouldn't look pretty nor taste good.
  2. I have added red capsicum too, to make the dish colourful. You could add in yellow capsicum too or just stick on to green capsicum only.

  2. I don't need any rice or chapathi with this, I just need my hands to relish that delicious dry sabzi... looks so well made and delicious...
