M&M Cookies

Clock is ticking. With just 2 days left for Christmas, someone little is happy that finally Santa is gonna come soon. He has been patiently waiting for Santa for so long. We had put up the christmas tree by end of November. After a nights sleep, when he got up in the morning, he came and started searching underneath the tree and said "Seems like Santa missed my gift". It was so hilarious to us but I could hear his heart fall apart. And then we had to sit down and explain. But then again, when his teacher mentioned that its December month, he got excited again. Well, he thought being nice one day would work .. he he...













My lil guy has been super confused because he saw Santa couple of times, ofcourse at the malls and then while we went watching christmas lights etc. He is like, why do you have to wait till christmas to give the gifts. You could hand it over to me when you see me in malls. In that way, Santa wouldn't have to take the trouble of coming down the chimney. Oh by the way, we don't have chimney at our place. Hope the lil one doesn't leave the door unlocked for Santa to get in .. he he.. 






Every time we would say how Elf is watching and Santa is preparing the naughty and nice list, to make him behave, he would try to be good but said one day that Christmas seems to be so far away.  :D . Well now that he just has to wait for 2 more days, he is super excited and so are we, to capture that expression when he actually gets to open his gift. Coming back to these cookies, they are chewy and good. Chocolate chip cookies are just a hit with kids. When its decorated with M&M's it becomes so beautiful. I bet Santa would be so pleased to see it under the tree, when he comes to drop off the gift. So why not make it this christmas, for Santa and for your family ofcourse :).



Ingredients
  1. 1/2 cup of salted butter at room temperature
  2. 1/2 cup of light brown sugar, tightly packed
  3. 1/4 cup + 2 tbsp of granulated sugar
  4. 1 large egg at room temperature
  5. 1 tsp of vanilla extract
  6. 1/2 tsp of baking soda
  7. 1 1/2 cup of all purpose flour
  8. About 1/2 cup of chocolate chips
  9. M&M's as require to top the cookies
Method
  • In a bowl, take the butter, brown sugar and granulated sugar. Beat it untill smooth.
  • Add the egg and vanilla extract. Beat it untill combined.
  • In another bowl, take the all purpose flour and baking soda. Whisk it to spread the ingredients evenly.
  • Add it to the wet ingredients and fold it in using a spatula untill just combined. Add the chocolate chips and fold in to distribute it evenly.
  • Refrigerate the dough for half an hour.
  • Preheat the oven to 375 F.
  • Scoop out equal amount of cookie dough to form rough balls out of it. Place it on the baking tray about 2 inches apart. 
  • Place and push in the M&M's over the cookie balls.
  • Bake it in the oven for about 10-12 minutes.
  • Remove it from the oven and let it stand on the baking tray for about 5-8 minutes, before you move them on to the cooling rack. Once cooled completely, store it in an airtight container for about 3-4 days. They remain chewy and taste better only for couple of days.
  • Yields about 12-14 cookies.
Tips
  1. If using unsalted butter then add 1/2 salt along with the flour.
  2. Chilling the cookie dough is an important step that shouldn't be done away with, to obtain the chewy cookies.
  3. You could add M&M's along with chocolate chips to the dough, if required.
  4. Do not go by adding baking powder or substituting it for baking soda. I used to do that and the cookies used to get the dome shape and get cracked on the top. Using baking soda is the best way to get the cookies in these shapes (as in the pictures).
  5. Do not over bake them if you want a chewy cookie. Bake it only till the edges are golden brown. It may look undone. But when you remove it from the oven and let it stand on the same pan for 5-8 minutes, they continue to cook and would deliver perfect cookies.
