Who wouldn't like to have a hot breakfast served to them in the morning. It just makes my day. I have heard of people skipping breakfast, which is something I really can't think of. Breakfast is one of the most important meals of my day. I love it when you don't have to rush to somewhere in the morning but just enjoy your breakfast at peace, something which has not happened to me in a while now :).
I love to make these crepes. Super simple to make on a busy morning and is liked by all equally. We love to combine it with some chocolate sauce. So you know, having chocolate early in the morning has to make your day a good one :).

- 1 cup of all purpose flour
- 2 tbsp of granulated white sugar
- A big pinch of salt
- 2 tbsp of melted and cooled butter + additional butter to grease the pan
- 1 tsp of vanilla essence
- 2 large eggs @ room temp.
- 1 1/4 cup of milk @ room temp
- In a bowl, whisk the eggs. Add milk, melted butter and vanilla essence to it. Beat it or mix it well
- In another bowl, mix the all purpose flour, sugar and salt. Whisk it.
- Make a well in the center of the dry ingredients and pour in the wet ingredients to it. Whisk it well for a minutes or more, untill you get a loose batter free of lumps.
- Let it sit for about 15- 20 minutes.
- Heat a 9 inch skillet (preferably a non stick skillet). Once hot, turn down the heat to medium high to maintain the same temperature throughout the cooking. Grease the pan with some butter. Pour a ladle of batter in the center of the pan, lift the pan and swirl around the pan while you tilt gently for the batter to spread in the pan evenly to form a disc. Cook it for about a minute or untill the sides of the crepes turn to curl up and the top would have turned dry.
- Flip and continue cooking it for about 25 seconds or untill done. Remove it on to a plate. Continue cooking the rest of the crepes and stacking them.
- Serve it warm with some chocolate sauce, powdered sugar sprinkled all over and berries on the side; accompanied by some hot coffee or hot chocolate. Perfect!
- Crepes are best served fresh and warm. However, you could reheat it in an oven if serving later.
True! I always wish I could sit down and eat my breakfast rather than having a hurried one of my table! Crepes is always loved, isn't it? Loving the whole set up... I just need a chair to sit in front and enjoy it...
