Ribbon Sandwiches are a great snack option for picnics, parties or even your kid's tiffin box. If you have the tomato and coriander spread in your fridge, (which if made before hand, can be stored in the fridge for about a week) the tiffin could be packed up by the kid :). Its so easy a sandwich, yet so appealing to the eyes and also your tastebuds.
The next time you have a snack party at your home and you have a very long list of items to prepare on your list, go for this sandwich. They are very easy to put up and also adds colour to the table of snacks.

- 10 slices of bread, with their crusts/ends chopped off
- Butter as required
- 1 cup of chopped coriander leaves
- 10-15 mint leaves
- 2 tsp of lemon juice
- 1 green chilly, chopped
- Salt to taste
- 1/2 tbsp of cooking oil
- 1 1/2 cups of capsicum/ bell pepper, chopped into small cubes
- 1/2 cup of chopped onion
- 1 medium sized tomato, finely chopped
- 1/2 tsp of black pepper powder
- Salt to taste
Method
Making of green chutney or spread
- In a bender, take all the ingredients listed under green chutney. Blend it into a fine paste. If you find it difficult to grind it into a paste, add 1-2 tsp of water but not more than that, else the chutney would turn watery.
- Heat a pan. Add the cooking oil. Once hot, add the onion and salt. Saute it. Reduce the heat to medium.
- Now add the chopped capsicum, tomato and black pepper powder. Stir it. Cook it covered but stirring every now and then.
- Once the tomato turns tender and mushy, turn off the heat. Let it cool.
- Blend it into a smooth paste.
Assembly of sandwich
- Take a slice of bread. Spread butter on one side of the bread slice. Spread the green chutney over the butter spread. Place another slice of bread on it. Spread the red chutney on it. Take another slice of bread and spread butter on it. Now place the buttered side of this bread slice on top of the chutney spread bread slice.
- Slice the bread diagonally to make them into two or four parts. Sandwich is ready to serve.
- The chutney can be prepared couple of days in advance and stored in the refrigerator. Making it before hand helps to cut down cook time if you are making these sandwiches for a party and you have too many other things to focus on.
- You could make the sandwiches ahead of time to serve. Just cover them in slightly damp kitchen towel and store it in air tight container to let them stay fresh.
