Pita Pockets/ Wraps

Being from the southern part of India, we survive on rice. But occasionally we love to have variety. Well who doesn't like variety right? These pita pockets are one such variety that we like to have for quick fix dinners. And when the name is fancy, dish is easy to put together and moreover has great taste and is healthy; we do repeat it often for dinner. Esp. in the hot summer, every single bite on the veggies that goes into the pita bread is so refreshing . They are great to be served in parties, as guests can build their own pita pockets as per their taste. Just have variety of veggie/protein filling options to be served.

Ingredients
  1. Pita pockets, as required
  2. Cucumber slices, 3-4 per pita pocket
  3. Tomato slice, 2-3 per pita pocket
  4. Lettuce, chopped
For Tzatziki Sauce
  1. 3/4 cup of grated cucumber, without seeds
  2. 2 cloves of garlic, finely chopped cucumber
  3. 2 cups of hung curd
  4. 2 tsp of lemon juice
  5. A pinch of paprika
  6. 2 tbsp of chopped dill leaves
  7. Pepper to taste
  8. Salt to taste
Method

Making of Tzatziki Sauce

  • Take all the ingredients listed under the making of Tzatziki Sauce, in a bowl. Give it all a mix to combine. Check for salt and pepper and adjust to taste.
Combining Pita pocket
  • You could use store made pitas. For homemade pitas, check recipe here.
  • If the pita had puffed up well, it would have pockets. If not you can go in for wraps, for which you need not cut the pita into half, but can spread the ingredients on the pita and wrap it up.
  • For pita pockets, take a pita and cut it into half. You can choose to spread a good amount of hummus, inside the pita. I have not done it here to keep it a little light. 
  • Stuff the pita pocket with the veggies of your choice. I chose to go with some lettuce, tomato and cucumber. Add in the protein of you choice. I chose to go with some homemade grilled chicken. You could also go for garbanzos, falafels etc. 
  • Take a tbsp full of Tzatziki Sauce and pour it on the filling and enjoy.
Tips
  1. You could mix and match the choice of veggies and protein, as per your taste/liking, to bring in variety every time to have them. 
  2. Do not assemble the pita pockets way before time of serving. It will make the pita pockets soggy.
