Have you ever tried Idichakka cutlet? Oh yeah, you heard me right. Idichakka cutlet.... One small family and one idichakka bought, can turn into multiple dishes. Yes, its made out of the same idichakka I made Idichakka thoran out of :). After all, having it in the same form becomes boring, so I tried it and amazingly turned out to be a hit.
Jacob was not in for the cutlet plan. He thought it would just another weird idea/recipe that he would have to become a guinea pig for. But when he had it, he was like, "Really.....Idichakka cutlet... it's so amazing". Anyways, I am glad that it turned out so good and was a success.
Ingredients
- 2 cups of cooked jackfruit, shredded/minced - Refer tips for cooking the jackfruit
- 1 cup of steamed potatoes, mashed
- 1/2 cup of finely chopped onion
- 1 tbsp of finely chopped ginger
- 1 sprig of curry leaves
- 2 green chillies, chopped
- 1/4 tsp of turmeric powder
- 1 tsp of garam masala
- Salt to taste
- 2 tbsp of all purpose flour
- 1 cup of bread crumbs
- 2 tbsp of oil
- Oil for shallow frying
Method
- In a pan, take 2 tbsp of oil. Once hot, add the chopped onion, ginger, green chillies, curry leaves and salt. Saute it till the onion turns tender.
- Now add the turmeric powder and garam masala and give it a stir.
- Add the cooked jackfruit and mashed potatoes to it. Mix it and cook it for 2 minutes.
- Once the mix cools down a little, pull out golf size balls of mixture and shape them into cutlets.
- Heat the oil in a pan for frying the cutlets. Once hot, turn down the heat to medium low.
- In a bowl, take the all purpose flour and add water to it to form a batter(not too thick nor too runny).
- Dip each cutlet into it and roll it in the bread crumbs and shallow fry it the oil, untill it attains a nice brown colour.
- Remove it on to a plate lined with kitchen towel/ paper towels. Serve it hot with some ketchup/ onion salad.
- For cooking the tender jackfruit, steam cook the jackfruit pieces untill they start to pull apart easily when pricked. Remove it from the steamer and let it cool a little. Shred/Mince the jackfruit pieces in a food processor to cut it down into smaller pieces. Don't overdo it.
- Keep the bread crumb in a bowl and not in a plate. This would help prevent wastage of bread crumbs and at the same time help the bread crumbs spread evenly over the cutlet.
- Since the cutlet mixture is already cooked, its just the bread crumb coating that needs to be cooked. Hence, fry it just untill the cutlet surface turns dark brown in colour.

ReplyDeleteI have heard that idichakka cutlet tastes like non veg ones but never tried it. U have added one more in my to do list Anupa.
