Aamras

Whenever I see an advertisement of jams spread on chapathi/ Indian flat bread, I always tend to crave for them. My lil one loves the chapathi lathered with jams or cheese or anything and rolled up. I don't know if it is the taste or its the fascination of rolls. I shouldn't mind right, as long as he eats. I personally love the combination of this aam ras spread on chapathi. They are yumm.

It is most commonly served with puris. Summer brings mangoes with them and  also so many different yummy ways to relish this absolutely juicy fruit. Aam ras is one of the perfect ways to have mangoes. So make it without fail this mango season.

Ingredients

  1. 2 medium sized ripe mangoes, peeled and sliced
  2. 3 tbsp of sugar or as required
  3. A pinch of saffron
  4. 1/4 tsp of dry ginger powder
Method
  • In a blender, puree the mango.
  • Once pureed, add the remaining ingredients and run it one more time, to blend it all together.
  • Remove it onto a bowl and serve it with puri or chapathi.
  • It can stay good in the refrigerator for upto a week, if stored in an air tight container.
Tips
  1. Addition of sugar would depend upon the variety of mango and also the taste preference. So do eye ball it as per your taste.
  2. You could add cardamom powder for additional flavour. My family doesn't prefer the taste of cardamom, hence I have avoided it.
  3. I have seen people add couple of tbsp of milk to the aam ras to thin it down. I haven't done it myself, because I feel the puree should be thick to spread on the chapathi. You could try adding it if you prefer a thinner Aam Ras.
