Blueberry Loaf

Berries in cakes/bread/loaf is one of my favorite version of having them. Blueberries in a loaf is just superb to have with some hot cup of coffee. Hmm...my mouth gets all watery whenever I think of them.








When made at our home, these don't last long. When I say long, I meant not even a day. Yes, it gets over in a day. These are so light and fluffy and soft that anybody would fall for it. And its pretty hard to deal with the temptation that you tend to eat one slice after the other.




My lil one hates blueberries as is but likes it in pancakes and loafs so I always tend to use it as an excuse to bake them. Make these deliciously loaf at your home. Because homemades are just perfect. They are not at all difficult and you get to eat it all warm and fresh.



Ingredients
  1. 1 1/2 cups of all purpose flour
  2. 1 tsp of baking powder
  3. 1/2 tsp of salt
  4. 1/3 cup of melted butter at room temperature
  5. 1 cup of white sugar
  6. 1/2 tsp of vanilla extract
  7. 2 large eggs
  8. 1/2 cup of milk
  9. 1 tsp of lemon zest
  10. 1 cup of blueberries
Method
  • In a bowl, combine the dry ingredients 1-3. Whisk it to spread it evenly.
  • In another bowl, beat the eggs. To the eggs add ingredients 4-6. Beat it well.
  • Add the dry ingredients and milk alternatively to the egg mixture while you beat it simultaneously.
  • Toss the blueberries in about 2 tbsp of flour, which would prevent the blueberries from sinking to the bottom of the baking pan.
  • Add the blueberries and the lemon zest to the batter and fold it in gently.
  • Grease a loaf pan and pour in the batter into it.
  • Preheat the oven to 350 F.
  • Bake the loaf for about 50-60 minutes or untill a toothpick inserted comes out clean.
  • Let the loaf cool down completely on a wired rack. Serve it as is or with some sugar glaze drizzled on top of the loaf.
Tips
  1. Do not overmix the blueberries else they tend to break and may change the colour of the batter.
  2. You could make a glaze to drizzle over the loaf. Mix 1/2 cup of powdered sugar and 1-2 tbsp milk to form a lump free paste consistency that could be drizzled over loaf before you slice it.
